Nine Mile Station & Skyline Park
The owners initially approached us about opening a market in a suburban location, focusing on Italian favorites and carry out / retail. After working through several financial models, we recommended that they pursue two opportunities at Ponce City Market. The new plan was considerably more ambitious than the market idea but profit modeling proved it to be a significantly better investment. Because we had worked with the landlord on two other projects (one at Ponce City Market and one through another project on the West Side) we helped the owners win over the landlord through a compelling concept presentation.
The landlord had already planned to operate an amusement park on the rooftop but they needed an operator they could trust. We named it Skyline Park. They also needed a second concept so we helped them create a rooftop beer garden-esque concept called Nine Mile Station.
From there we were engaged to develop the food and beverage menus which considered recipes, costing, station load and through-put. Limited space; multi-concepts from one kitchen; enormous volume swings; speed of service and competitive advantage all had to be considered when creating the offering.
Both concepts opened in the summer of 2016.
