We were engaged to help our client evolve an authentic Tuscan-style fast casual restaurant, market and culinary club. Our client had recently moved to the US from Florence, Italy after having studied architecture there. During her time there she learned that she loved food and wanted to open a business in the US that would celebrate true Tuscan gastronomy.  We worked together to move methodically from financial modeling through business plan, site selection, lease negotiation, design, menu engineering, through-put layout, sales channels, and launch. Today Bellina is the darling of the new Ponce City Market development in Atlanta and is thriving.  We cherish our relationship with Tal and her team and are proud to share her endorsement of our work:

In my home basement, more than a year ago, a passionate discussion about opening an original Italian concept was held. I had an extravagant idea with no tools on how to execute my dream.
